Dahl Soup

 

Ingredients

  • 2 cups Lentils (organic red or yellow split)

  • 1 tomato

  • 3 small or 1 large carrots

  • ½ to 1 tsp. turmeric

  • 1 to 2 cups spinach

  • 2 to 3 cloves garlic (or ginger)

  • 3 granules *Hing

  • 1 T. ghee

  • 1 T. avocado oil

  • 2 tsp. cumin seeds

  • Fresh cilantro

  • Salt to taste

Directions

1.     Cover lentils in water and soak overnight, then drain and rinse

2.     Fill large pot with water add lentils, tomato, carrots, turmeric and a pinch of salt. Bring to a boil.  Boil for 5 minutes then simmer for approximately simmer until consistency is right.  Add spinach at the end.

3.     In stove top pan add ghee and avocado oil.  Brown the spices – Hing, garlic and cumin seeds (heat but don’t burn) then add to soup.  Simmer a few minutes more to marry spices.  Ground Hing granules with a pestle in a mortar before adding to pan.

4.     To serving bowls, add chop cilantro and salt to taste.
