MEXICAN COLE SLAW SALAD

(A Party in a Bowl)

 

SERVES APPROX. 12 - 16 

 

ADD TO LARGE BOWL:

  • 2 heads of organic cabbage (1 green, 1 purple) - chop or shred
  • 1 bunch organic green onions (approx. 2 cups) chopped
  • 4 ears of organic corn - cooked & cooked.  Use knife to shred kernels off of ear into salad bowl.
  • 4 - 6 large heirloom tomatoes or 8 medium sized - chopped
     

DRESSING:

  • 1 cup olive oil
  • 1/2 cup white wine vinegar
  • 1 teaspoon stevia (natural sugar alternative)
  • 1  1/2 teaspoons hot pepper sauce (I like Melinda's Chipotle's Pepper Sauce or Brother Bru Bru's Chipotle Pepper Sauce)
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 cloves garlic - minced
  • Pepper to taste
