Pumpkin Seed Pesto

Ingredients

  • 2/3 cup raw pumpkin seeds

  • 1 cup fresh basil leaves, packed

  • 3 raw garlic cloves

  • 1/3 cup olive oil or avocado oil

  • 2 tablespoons fresh lemon juice

  • Salt and pepper to taste

Directions

  1. Use a food processor, immersion blender, or cup sized blender to blend all ingredients together until pesto is mostly smooth.

  2. Store covered tightly in the refrigerator and enjoy within 24 hours.
