Quinoa Burger

 Ingredients

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 1 tbsp. olive oil

  • 1 cup cooked black beans

  • 1 carrot, finely grated

  • ½ cup baked sweet potato (without skin)

  • 1 cup cooked quinoa (see recipe below)

  • 1 tbsp. caraway seeds

  • 3 tbsp. cilantro chopped

  • 2 tbsp. tomato paste

  • 1 tsp. raw apple cider vinegar

Directions

Sauté onion and garlic in 1 tbsp. of olive oil.  Add beans and cook for 2 minutes.  Turn off heat and mash beans in pan.  Put beans into a bowl and mix in remaining ingredients.  Form patties and bake until heated through, approximately 5 – 10 minutes on each side.

Quinoa Prep:

Soak ¼ cup of raw quinoa for 15 minutes, if possible, to remove the saponin coating, which can have a bitter taste.  Rinse quinoa thoroughly.  In a saucepan, bring to a boil ½ cup of water, ¼ cup of quinoa, and a pinch of sea salt.  Cover and simmer for about 20 minutes.  Remove from heat and allow to sit for 5 minutes.
