Turkey Soup with Winter Vegetables

Ingredients

  • 1 or 2 large turkey legs

  •  2 bay leaves

  • 1 tsp. dried parsley

  • 1 daikon radish or

  • 2 carrots, chopped

  • 1 large parsnip, chopped

  • 2 turnips, chopped

  • 3 stalks celery, chopped

  • 1 yellow onion, chopped

  • sea salt & pepper to taste

Directions

1.     Place turkey legs in a large soup pot.  Cover with purified water

2.     Add bay leaves, parsley, and thyme and bring to a boil

3.     Simmer for 4 hours, until meat falls off the bones.

4.     Strain soup and remove bones.

5.     Dice meat and add back into the broth

6.     Add vegetables and simmer for 1 more hour.

7.     Salt and pepper to taste

Makes about 6 servings
